Matar Paneer

 

Matar paneer a North Indian dish is like a perfect homely meal in everyday house of India. The curry is super simple to make, that is cooked with delicious paneer or cottage cheese. A common recipe among the roadside dhabas and for the deluxe restaurants too. I have used fresh peas here, you can use the frozen peas too, which cuts down the cooking time. Serve it with rice or an Indian bread of your choice. Try this recipe for a homely afternoon lunch.




Ingredients

  • 500g paneer ( cottage cheese )
  • 4 tomatoes
  • 4 green chilies
  • 4 medium onions
  • 1 cup fresh peas
  • 2 tbsp. vegetable oil
  • 1 tsp ghee
  • 1 inch cinnamon stick
  • 3 Green Cardamom
  • 3 Cloves
  • 10-15 Black peppercorn
  • 1 tsp cumin seeds
  • salt to taste
  • 2 tsp ginger garlic paste
  • 1 tsp red chili powder
  • 1.5 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp sugar
  • 3.5 cups of water
  • 1 tsp garam masala powder
  • chopped fresh coriander




Method

  1. Blend the tomatoes to make a fine paste.
  2. Finely chop an onion.
  3. Cut the paneer pieces into desired shape evenly.
  4. Sear the paneer pieces, until they develop a light golden crust.
  5. In a kadai heat oil and ghee together n low flame and add the cinnamon, clove, cardamom, black peppercorn and cumin seeds.
  6. Just when the cumin seeds start to crackle add the finely chopped onions.
  7. add salt and stir until the onions turn golden brown, add 2 tsp ginger garlic paste and the chopped green chilies.
  8. mix it completely and as the raw aroma of ginger garlic goes away add the tomato puree, cover and cook until the masala releases its oil, now add all the powdered spices except the garam masala powder. 
  9. Mix it well, add little splashes of water if necessary, now add 1 tsp sugar and cook it through.
  10.  Now add 3.5 cups of hot water and attain the gravy like consistency, mix it well. 
  11. Add the fresh peas and cook for few minutes then add the garam masala powder.
  12. Cook on slow flame for few minutes then add the seared paneer pieces. 
  13. Mix it gently, then add the chopped coriander leaves.
  14. serve it how with rice or an Indian bread of your choice.

    Yellow Fish Curry

      This fish curry is my mother's recipe, and it is quite different from the normal mustard fish or "shorshe maach". The use of Bori (dried lentil dumplings) is traditional and it gives a wonderful texture to the curry. The flavour of mustard enhances with time as it cooks along with the fish.     Bengali Chorchori

     Chachchari is a nutritious yet lip-smacking dish with wholesome nutrition of vegetables along with a subtle – spice taste. This dish is very familiar in the Eastern Region of India where it is consumed in the second phase of a meal with some hot steaming rice, hence acting as a cooling agent for the stomach (especially the potatoes and pointed gourd). The origin of this dish is quite unique as it is said that during the British Raj when child marriage was into existenxe, it was very common for the teenage girls to be window at a young age, later on they exile to Kaashi (now Varanasi).
