Achari Paneer Tikka

 

Achari Paneer tikka is an amazing appetizer that is smoky, creamy and has the spiciness of the pickle used. Super simple recipe given that the spice combinations are right. No doubt it is a mouthwatering dish when it comes to starters. For enhanced flavour add the tikkas to a romali roti or laccha paratha add sliced onions, squeeze a lemon on top and enjoy with your favorite dip.


Ingredients

  • 450 g Paneer ( cottage cheese )
  • 2 medium tomatoes
  • 1 large onion
  • 1 capsicum
  • 2 tbsp mustard oil
  • 1.5 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp amchur powder
  • 1 tsp ajwain (carom seeds)
  • 1 tsp roasted and crushed kasuri methi (fenugreek leaves)
  • 1 tsp garam masala powder
  • 2 tbsp roasted besan (gram flour)
  • chopped coriander leaves (handful)
  • salt to taste
  • 1 cup dahi ( beaten curd )
  • 2 tsp pickle 
  • 2 tsp ginger garlic paste
  • melted butter as required






Method
  1. Portion the paneer into 4 cm cubes, separate the petal from the onions, cut the tomatoes and capsicum into cubes.
  2. Combine all the above ingredients together and prepare the marinade. Add vegetables and mix thoroughly, next add the paneer pieces and mix carefully, it should not break. marinate for 15 minutes.
  3. Arrange the tikka in a skewer as shown in the video, smoke the prepares skewers with charcoal and ghee, pan fry until  it is golden brown.
  4. Hold the skewers on top of the flame and pour butter on top, when the edges have charred, serve immediately.

Yellow Fish Curry

  This fish curry is my mother's recipe, and it is quite different from the normal mustard fish or "shorshe maach". The use of Bori (dried lentil dumplings) is traditional and it gives a wonderful texture to the curry. The flavour of mustard enhances with time as it cooks along with the fish. We have used Rohu, you can also use Hilsa or Katla for this recipe.
