Mango Ice cream

 This Mango Ice – Cream recipe comprising of milk, sugar, and mangoes is an easy-to-go recipe as well as one of the most crucial desserts that everyone can make at home. This is a fuss-free recipe without any added preservatives, chemical sweeteners, or any other harmful substances, besides the best part about this recipe is that it does not require any gadget just like an ice–cream maker. INGREDIENTS : 

  • (3-4) Dasheri Mangoes or Himsagar Mangoes
  • 1litre Milk
  • 3/4th cups of Sugar
  • 1.5 cup Whipped Cream



METHOD :

  1. Peel the mangoes and puree them in a blender.
  2. Make some slices of mangoes and cut them into small pieces.
  3. In a kadhai pour the milk and keep it stirring on low-medium heat so that it does not burn.
  4. Once the volume is reduced to half add the sugar and again reduce it to 3/4th or till it reaches to the consistency of condensed milk.
  5. Let it come to room temperature and add the mango puree and mix them well.
  6. Chill the mix in a fridge.
  7. Add 1.5 cups of whipping cream and start beating at low speed for the first couple of minutes, once it reaches a thick consistency start beating it at high speed till the consistency is airy.
  8. Now, gently mix the mango mixture with whipped cream by folding it gently.
  9. Pour the mix in the ice–cream molds and add the mango pieces by pressing them gently from the top. Do not overfill the mold. Add some mango puree from top and make the surface plain.
  10. Refrigerate for (6 - 12) hours or for best result let it be overnight.
  11. Lastly, gobble it down.
  12. A crucial tip, i.e., while beating the whipped cream always chill the vessel in which you will be beating the cream as well as keep it upon a bowl of ice and add some salt in order to prevent its melting point.

Yellow Fish Curry

  This fish curry is my mother's recipe, and it is quite different from the normal mustard fish or "shorshe maach". The use of Bori (dried lentil dumplings) is traditional and it gives a wonderful texture to the curry. The flavour of mustard enhances with time as it cooks along with the fish. Bengali Chorchori

 Chachchari is a nutritious yet lip-smacking dish with wholesome nutrition of vegetables along with a subtle – spice taste. This dish is very familiar in the Eastern Region of India where it is consumed in the second phase of a meal with some hot steaming rice, hence acting as a cooling agent for the stomach (especially the potatoes and pointed gourd). The origin of this dish is quite unique as it is said that during the British Raj when child marriage was into existenxe, it was very common for the teenage girls to be window at a young age, later on they exile to Kaashi (now Varanasi).
