White Sauce Pasta

 White Sauce Pasta is a dish with al - dente penne cooked in an aromatic white sauce with oregano, basil, and cheese, a proper delight to your taste buds. The method of this recipe is very simple and can be accorded by anyone in order to yield perfect pasta with a perfect sauce. INGREDIENTS

  • Water (As Required)
  • Salt (As Required)
  • 250g of Penne Pasta
  • 40g of Butter
  • 2.5 tbsp of Refined Flour
  • 1 tbsp of Oil
  • 400ml of Milk
  • A pinch of Black Pepper Powder
  • A pinch of Chili Flakes
  • ½ tsp of Oregano
  • 40g of Processed Cheese



METHOD

  1. In a heavy bottom vessel, boil some water and add salt to it. Let it come to a simmer and add the pasta.
  2. Cook the pasta by carefully reading the instructions which are being printed on the back of the packets. If in case there are no instructions, boil the pasta till they are Al-dente (cooked to be firm to the bite).
  3. Drain the excess water and transfer the pasta into a bowl and coat with some oil.
  4. Start preparing the sauce by melting down butter on low flame and also by adding some refined flour. This is called roux.
  5. Keep cooking the roux on low flame in order to prevent it from burning.
  6. Add the milk slowly in order to prevent the formation of lumps.
  7. Keep pouring the milk till a nice amount of sauce is obtained. Check the consistency of the sauce precisely with the back of a spoon. Neither the consistency must be thick or runny.
  8. Once the sauce is obtained season it with some flavorings.
  9. Add the cooked pasta and then the cheese.
  10. Mix the pasta well and coat it evenly with the sauce.
  11. Taste and adjust the seasoning if required. 
  12. Garnish with some fresh basil and enjoy.

  This fish curry is my mother's recipe, and it is quite different from the normal mustard fish or "shorshe maach". The use of Bori (dried lentil dumplings) is traditional and it gives a wonderful texture to the curry. The flavour of mustard enhances with time as it cooks along with the fish.
